Is 8gb of ram and 1.5gb of video memory even usable by Vista 64?

I have built two high end computers so far, and with an increasing ability, budget, and desire, i find myself looking at building another. I plan on using an AMD Athlon64 X2 6000+ in AM2 socket, with 4 sticks of 2gb Corsair XMS2 RAM for a total of 8gb of ram, and then two "Leadtek PX8800 Ultra Leviathan GeForce 8800Ultra 768MB" cards hooked together in SLI for a total of 1.5gb of Video memory, and then probably a Raid setup using sata 3.0gb/s drives. All on an Asus Crosshair mobo, with probably a 1000w PSU. This computer will run Windows Vista Ultimate Edition 64-bit, and be hopefully so powerfull that it can straddle both sides of the spectrum when it comes to the huge difference between what's needed to run 3d PC games in max detail/speed, and also run professional Solid Modeling 3d CAD programs. Can Vista Ultimate 64 actually use all of the memory and video power? No sense buying in excess of what the OS can use.
