How are professional 3D games created?

I'm talking about 3D games such as Call of Duty. What kind of software is used? I understand that the modelling of the characters is done in Maya or 3D Studio Max but how do you actually make the game where you can control them? Please don't tell me that it's too hard or too complicated. I'm only asking for a list of programs used to create 3D games.

2. Most coding for games is done in either C++ or C#. If you're looking into trying it yourself, may I suggest learning C# in conjunction with the XNA developer kit? It allows you to create games for Windows, and if you enjoy it, you can pay a subscription to be able to move the games over to your Xbox 360!
